Yes, you can add or remove hosts or services to or from maintenance windows at any time.

The status of the host or service will change the next time the service monitor executes so you may see a delay between adding or removing the host or service and when the status moves in or out of maintenance. This period should not be longer than the check interval for the service monitor or host check.
